๐Ÿฅ“ Scientists from the Texas A&M College of Agriculture and Life Sciences Department of Animal Science have set out to find a way to cure meat that is as tasty as it can be, but that answers consumer cancer concerns!

     • The conventional curing process involves adding sodium nitrite to the meat – however safe and efficient that may be, it’s long been associated with cancer concerns. So the research is aiming at finding an alternative way to achieve the same results, but without needing to add natural or synthetic nitrite sources.

     • Apparently, a novel amino acid-based method is expected to do just that. A lot of testing is still necessary, but results look promising  and hopefully, delicious too! For more details on the study, read this.
